  • 1 whole organic chicken (approximately 4-5 pounds)
  • 4 cloves of garlic, grated
  • 1 large onion, diced
  • 2 celery stalks, chopped

  • 2 cups kale, stems removed and chopped
  • 10 cups spring water
  • 1 large onion, sliced (for roasting pan)
  • 1 large onion quartered for cavity
  • 1 orange sliced
  • Italian seasoning, to taste
  • Celtic sea salt, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Roasting the Chicken: Place sliced onion and 1/2 c water in the bottom of the roasting pan. Place the whole chicken on a roasting rack in a large roasting pan. Rub the skin with Celtic sea salt and Italian seasoning, ensuring an even coating. Lay all over the chicken in the roasting pan with sliced onions and the sliced oranges.
  3. Skin Infusion: Once the chicken is roasted to perfection, let it rest for a few minutes. Remove and finely chop the crispy skin. Blend the skin with the chicken juices until you get a smooth, flavorful mixture. This will serve as the natural thickener for your soup.
