UBE JAM

INGREDIENTS

  • 2.2 lb purple yam (halaya)
  • 1 12 oz evaporated oat or coconut milk
  • 1/2 c dark brown sugar
  • 1 10 oz condensed oat or coconut milk
  • 1/2 t Celtic sea salt
  • 1/4 c Miyokos oat milk butter

INSTRUCTIONS

  • steam yams, peel, mash, and set aside,
  • heat evaporated oat milk with brown sugar until the sugar is dissolved,
  • stir in condensed oat milk,
  • add purple yams, Celtic sea salt, and oat milk butter,
  • stir until it gets to the thickness you desire,
  • the thicker the better, usually 10 minutes.

UBE ICE CREAM

INGREDIENTS

  • 2 c oat milk heavy cream or coconut heavy cream(cold)
  • 1 can oat milk condensed milk or coconut condensed milk(cold)
  • 4 t Ube flavoring (powder)
  • 1 t 100% vanilla flavor (alcohol-free)
  • 1/2 c Ube jam (prepared above)

INSTRUCTIONS

  • Whip nondairy milk heavy cream until it peaks,
  • pour nondairy milk and condensed nondairy milk into the center and whip again until it peaks,
  • add Ube powder flavoring and 100% vanilla extract, stir in,
  • stir in Ube jam, and mix well.
  • pour the mixture into a freezable dish,
  • put in the freezer and freeze,
  • serve after it is completely frozen.
