Celery Roots and Stalks Soup

Ingredients:

  • 2 celery root bulbs
  • 1/2 c oat butter
  • 1 c Silk unsweetened Oat milk creamer
  • 1 c Chobani oat milk, extra creamy
  • Celtic sea salt & fresh ground black pepper
  • Italian seasoning
  • fresh chopped chives or parsley (garnish)
  • 3 T oat butter, divided
  • 1 cup chopped onion
  • 1 1/2 cups sliced leeks, white and light green parts only
  • 1 large bunch or 2 small bunches celery, chopped, divided
  • 2 cloves garlic, grated
  • 4 cups vegetable stock
  • 2 FREH bay leaves
  • 1/4 to 1/3 cream of coconut or Chobani oat milk or condensed goat milk
  • Freshly ground black pepper, to taste
  • 1/2 to 1 1/2 t Celtic sea salt, to taste
  • Fresh chopped chives or parsley, for garnish

Instructions for Root Preparation:

Peel celery root. Cut it into chunks. Put into a pot of boiling seasoned water for 5 – 10 minutes.

Drain smash, and whip with oat milk butter, creamer, and milk. Season to taste. Set aside.

Instruction for Stalk Preparations:

  • Saute onions, leeks, celery and garlic
  • Add organic vegetable stock, bay leaves, and seasonings
  • Simmer covered for 20 – 30 minutes. Remove bay leaves and set aside.
  • Puree celery stalks.
  • Pour blended celery stalks back into a large pot.
  • Mix in the non-dairy kinds of milk of choice (the thicker the better).
  • Whisk in celery root so there remains chunkiness. Add the bay leaves that were set aside.
  • Simmer on very low for 20 minutes then cool covered for 10 minutes before serving
  • Serve with garnish, choice: celery leaves, chives, parsley, pumpkin seeds.
